Healthy Heart Cooking - Chocolate

Dark Chocolate Truffles

200g dark chocolate

400g skimmed milk

100g unsweetened coconut flakes

Bring the milk to a simmer, pour over chocolate in a bowl and mix gently until a smooth liquid (no lumps)

Scrape down the sides; allow cooling then refrigerating over night.

Scoop out using a Parisian scoop and hot water, place each truffle on a tray covered with plastic wrap then refrigerate before coating.

Whole Wheat Crêpes

100g whole-wheat flour

¼ litre skimmed milk

1 egg

Light olive oil

Sieve the flour into a bowl, make a well in the centre.

Gradually add the egg and milk and whisk to a smooth batter.

While allowing the batter to rest, heat the crepe pan or small frying pan.

Pour a small amount of oil into a measuring jug, and then pour a little into the heated pan then pour the oil back into the jug.

Using a ladle just cover the bottom of the pan, cook till brown then turn and cook other side.

Turn out on a plate then repeat until all mixture is used

Chocolate or Fruit Yogurt Filling

4 tbsp low fat yogurt (unsweetened)

2 tbsp shaved chocolate or truffle mixture

¼ cup of chopped mixed berries or fruit.

Fold into the yogurt the chocolate or fruit.

Then evenly spoon onto each crepe, just off centre.

Taking the shortest fold over the mixture, then roll the crepe.

Simple but tasty.


Bread Rolls or Loaf

This recipe makes 8 rolls or 1 loaf

200g Whole-wheat flour.

1 packet yeast (check the sale by date, out of date the yeast is inactive)

125ml water

Sieve the flour into a bowl

Using ¼ of the liquid dilute the yeast and allow to activate (its ready when it starts to bubble, about 5 to 10 minutes)

Mix the flour water and yeast mixture until firm and slightly sticky dough forms.

Place back into the bowl, cover and prove till doubled its size.

Knock back the dough.

Shape into rolls or a loaf then prove till doubled in size.

Bake at 350*f for 10 minutes or until golden brown.

This hardy bread and can accept additional flavours; I used roasted garlic and herbs at the demonstration, which you all adored.


Nut Roast

1 lb extra firm Tofu

¼ bunch cilantro

¼ cup walnuts

¼ cup pecans

¼ cup cashew

¼ cup pine nuts

¼ macadamia

1 packet of Thai peanut rub

Dice the tofu

Place all ingredients in a food processor, pulse to a paste (not to fine)

Turn out onto a greased sheet and shape

Bake at 200*f for 40 to 60 minutes or until browned

Slice and serve.
